Introduction: Chicken Garden Salad

This easy to assemble pasta salad is a nice and balanced meal or side dish for summer. It's got a lot of flavor, and you can use some left overs for the main ingredients!
You will need: 
  • 2 already cooked chicken breasts
  • 1 bell pepper
  • 1/2 an onion
  • A hand full of cherry tomatoes
  • 1/2 cup of mayonnaise
  • 1 tsp basil (fresh and chopped or dried) 
  • 1 tsp garlic (fresh and chopped or dried)
  • About 1/2 a pound of cooked pasta (rotini or shells work best)

Step 1: Pasta and Chicken

If you don't have left overs that you can use for this recipe then you will need to cook the chicken and the pasta. I bought oven cooked chicken that I used for this recipe, but it doesn't matter how the chicken is cooked, as long as it tastes good. Also, I used tri-color rotini,  which I think adds a little extra flavor in this recipe. 
  • Dice the already cooked chicken and let the pasta cool. 

Step 2: Chop Up the Veg

  • Chop up into tiny squares the onion and pepper and slice your cherry tomatoes in thirds. 
Note: If you love it when you get a scoop of salad and all the ingredients are in that one scoop then be sure that you chop up all of your ingredients small and it cube shape.  

Step 3: Stir It Up!

I found it easy to put the ingredients in a big saucepan and mix them in this order. 
  • First put the pasta in the bowl, followed by the mayo and mix. 
  • Next add the vegetables and the chicken and the spices, then mix. 

Remember this recipe next time you have some left over chicken and pasta :)
