Introduction: Chili Cheese Fries
"For Left Over Monday,"
Chili Cheese Fries
Serves: 4-6
Preheat oven: 400 degrees
Need:
Left over Chili (see my Chili recipe that was featured on instructables)
chaddar Cheese (2 cups)
Potatoes 6-8
Left over pork lion * optional
Oil to fry the potatoes
salt, pepper and garlic salt

Step 1: Fries
Wash and Cut the potatoes into fries.
Place the fries into a bowl with cold water and set to the side.
Place oil in pan and turn on med-high heat.
Once oil reaches desired temperature place a batch of fries into the oil.
Cover and cook until golden brown.
Remove fries from oil and place on a plate with a paper towel.
Season fries with garlic salt, pepper and salt.

Step 2: Chili, Cheese and Pork
While fries are cooking get out left over chili, shred the chaddar cheese, cut up pork lion into chunks.
I used a large glass pan to bake the chili cheese fries in the oven, but you could also use a cookie sheet.

Step 3: Layer & Bake
Layer fries on bottom of glass baking dish, a layer of cheese, a handful of pork, and cover with a thin layer of chili.
Next layer, start again with fries on top of chili, cheese, pork and top with the rest of the chili.
Sprinkle the remainder of the cheese on top.
Bake at 400 for 15-20 minutes
