Introduction: Chili and Cornbread

A southern classic with a sweet twist. Let's face it there's a million Chili recipes out there, this one differentiates itself with a sweet and spicy blend packed with flavor accompanied with one of the simplest yet most delicious Cornbread recipe I've found.

For vegetarians or if you simply don't want to eat meat that day I would recommend using Quinoa instead of ground beef the result is amazing and the quinoa soaks up a lot of the chili flavors.

Try it out it's very easy and the fruits of your labor will pay off !

Step 1: Ingredients

For the Chili:

- 1 Wallawalla Onion

- 1 Carrot

- 1 Green and Red Pepper

- 1 Jalapeno

- 1 Zucchini

- 4 Tomatoes

- 1 Can of Rotell with green chilis

- 1 Can Kidney Beans

- 2 Cans Black Beans

- 1 Lb Ground Beef

Seasoning:

- 1 Tblspn Chili Powder

- 1/2 tblspn Paprika

- 1/2 tblspn Cayenne Pepper

- Salt and pepper

Cornbread:

- 1 Cup of flour

- 1 Cup of Cornmeal

- 2/3 Cup Sugar

- 3 1/2 tspns Baking Powder

- 1/3 Cup of Vegetable Oil

- 1 Egg

- 1 Cup of Milk

Step 2: Cook Veggies

In a Pot pour 2 tablespoons of vegetable oil.

Add Onions, Carrots, jalapenos, Bell Peppers, zuchini and rotell.

Let cook on high for 20 minutes stirring frequently.

Step 3: Add Beans and Tomato

Add Beans and Diced tomatoes. Cook for an additional 10 minutes. While the veggies are cooking start to cook meat and make seasoning.

Step 4: Make Seasoning

In a small bowl combine:

1 tblspn chili powder

1/2 tbl Cayenne pepper

1/2 tbl Paprika

Salt & Pepper.

Add to Cooking Veggies.

Step 5: Cook Ground Beef

Season and cook ground beef and add to chili.

Step 6: Make Cornbread

In a bowl combine:

1 Cup of flour

1 cup of cornmeal

2/3 cup sugar

3 1/2 tspn baking powder

Mix Dry ingredients

Add 1 egg

1 cup of milk

1/3 cup vegetable oil.

Mix well

COOKING INSTRUCTIONS:

Preheat oven to 400F*

cook for 30 min

Use toothpick to check if completely done on inside.

Step 7: Add Sugar

After the chili has been cooking with the meat for 30 minutes add 1 cup of sugar to soften the taste. If you like spicy food I would recommend avoiding this step and maybe even adding a few jalapenos at the beginning.
