Introduction: Chipotle Chicken
4 Chicken Thighs ,1 cup chopped onions , 1 cup chopped bell peppers ,1 15 oz can chopped tomatoes ,1 chipotle in adobe sauce diced, 1 to 2 cloves garlic ,1 teaspoon cumin, 1 teaspoon coriander, big pinch Mexican or Italian oregano ,salt and pepper to taste ,pinch of sugar ,1/2 lime ,1 tablespoon of oil.( I use canola )
Step 1: Chipotle Chicken
Season the chicken with salt and pepper. Add a tablespoon of oil to large pot on medium high.Brown on both sides ,then remove from pot.
Step 2: Chipotle Chicken
Add onion and pepper. Saute till soft. Then add garlic ,cumin ,chipotle,coriander,oregano.Stir for two minutes.
Step 3: Chipotle Chicken
Add tomatoes and return chicken.Add sugar and check for salt & pepper. If it seems a little dry and some water.I added about a 1/4 cup. Then squeeze in 1/2 a lime. Cover and simmer for 15 minutes .Serve with rice . Enjoy !
