Introduction: Chocolate Mint Cookies
In this instructable I will show you how to make mint cookies. This recipe for homemade chocolate mint cookies is super yummy and reminds me of Girl Scout Thin Mint cookies. I had a request to make mint cookies so that is what I did. They are so good and really easy to make if I can make them you can make them. Let's get started!

Step 1: Ingredients/Tools

Ingredients:
- 3/4 cup of unsalted room temp butter. (170g)
- 1 cup of white granulated sugar (198g)
- 1 Large egg
- 1 tsp. of vanilla extract (5ml)
- 1/4 tsp. of peppermint extract (add in additional 1/4 tsp. of extra minty cookies)(1ml)
- 1 1/2 cups of all-purpose flour (plain flour) (192g)
- 3/4 cup of unsweetened cocoa powder (75g)
- 1 tsp. of baking powder (5g)
- 1/2 tsp. of salt (2g)
Topping/Coating
- 12 to 14oz Chocolate for Dipping (candiquik, candy melts, chocolate chips, chocolate bars, etc.) (350 to 400g)
- 1/4 to 1/2 tsp of peppermint extract (a little goes a long way) (1 to 2 ml)
Tools:
- sheet pan or cookie sheets
- wire rack
- silicone baking mat or parchment paper
- hand mixer or stand mixer
- sifter
- rolling pin
- bowls

Step 2: Cream Butter and Sugar
First take our room temp softened butter and add it to a large bowl. Then beat it with a hand mixer or stand mixer with paddle attachment for 3 to 5 minutes. Next add in the white granulated sugar and mixer for a few minutes. Make sure to scrape the sides of the bowl with a spatula as necessary.
Step 3: Eggcellent
Now we add in our vanilla extract, peppermint extract, and our large egg then mix until well combined.
Step 4: This Is How We Sift It
Next add your flour to a sifter. Then add your unsweetened cocoa powder, baking powder, and salt. Now sift those ingredients together, tapping the sides of the outside of the sifter to allow accumulated dry ingredients to fall down. You may have some larger clumps of cocoa powder left, just press them down with a spoon or your knuckles and they will go right through. We are left with a pile of nice sifted dry ingredients.
Step 5: Add, Mix and Scrape
Now we add in your dry ingredients slowly and mix on low speed. Scrape the sides of the bowl as needed, soon you will be left with a nice cookie dough. Unplug the mixer then remove the dough from the beaters, resist the urge to eat that cookie dough...I know you want to.
Step 6: Divide, Roll, Stack, Chill
Now we bring out dough together into a ball in the bowl and divide it in half, I just use my spatula for this. Next place a sheet of parchment paper on your surface and roll out one half of the dough making it between 1/8th and 1/4th of an inch thick, add a bit of flour to your rolling pin as needed. Now do that with the other half, then stack them on top of each other. So it will be layered. Parchment paper, rolled cookie dough, parchment paper, and then one more piece of parchment paper on top. Next place the stack in the fridge and let it chill for at least an hour.
Step 7: Cut and Bake
Once our dough has chilled we can use a small round cookie cutter and cut out all of our shapes. Take the dough scraps and bring them together into a ball and then roll them out again, etc. Place the unbaked cookies on a sheet pan or cookie sheet lined with parchment paper or a silicon baking mat. While you are cutting the cookies out, preheat your oven to 350 F. (176 C) Once you are ready bake the cookies for about 8 minutes for softer cookies and 9 minutes for more crunchy cookies. Let them cool for a couple minutes on the pan before placing them on a cookie rack to cool completely.
Step 8: Melt, Mix, Dip, Place
Now let's melt our chosen chocolate, I alway do a variety of different kinds. Candiquik is one of my favorite dipping chocolates, because it has a nice runny consistency once melted. I just melt mine in the microwave on bursts of 20 to 25 seconds and then stirring, until nice and melted. I also sometimes will use the defrost setting and set it to 45 seconds. Or you can certainly do the double boiler method to melt your chocolate, candy melts, coatings, etc. Once it is melted, add about 1/4 tsp to 1/2 tsp. (1 to 2 ml) of peppermint extract into the chocolate and stir. A little goes a long way! Next just dip your cookies into the chocolate, then with a fork scoop them out of the chocolate and tap the side of the fork, this will allow excess chocolate to fall off the cookie. Now just place it on a silicon mat lined or parchment paper lined sheet pan to set. I just use the same ones from before.
Step 9: Drizzle
Now to make them more fancy you can drizzle other colors of chocolate on top. Just take a bit of chocolate and place in a small baggy and snip the corner off with scissors. Oh yeah so yummy! Enjoy! :)
