Introduction: Chocolate Peanut Butter Banana Bread (Vegan)
I wanted to try something different for this round of time-to-use-the-overly-ripe-bananas. Peanut butter banana sandwiches came to mind...and throwing chocolate in never hurt anything. I found a few recipes out there and hippied one up for myself.
Like many quick breads, this is a very simple recipe to follow, and can be done in just a few steps.
Ingredients
1 1/2 cups flour
1 tsp baking powder
1tsp cinnamon
1/2 tsp baking soda
1/4 tsp salt
3 super ripe bananas
1 cup sugar
3/4 cup peanut butter (smooth or crunchy)*
3/4 cup hazelnut oil (can substitute canola oil)
2 tsp vanilla
3/4 cup raw cacao nibs
Cooking spray
Tools
Mixing bowls
Measuring cups/spoons
Wooden spoon (unless your electric mixer didn't recently break)
Bread pan
* You may want to adjust oil and sugar a little based on the type of peanut butter you use. The organic or freshly ground varieties are less sweet and are a bit dryer.
Step 1: Mix Batter

Preheat oven to 350oF

Mix flour, baking soda baking powder, cinnamon and salt

In a separate bowl, mix bananas, sugar, peanut butter, oil and vanilla

Add dry mixture into wet in a few parts...thoroughly incorporating each time
- Once it's all mixed, stir in cacao nibs
Step 2: Bake

Pour batter into bread pan

Bake at 350 for 65 - 75 minutes - until knife inserted in the center comes out clean
- Cool, cut, serve...
