Step 1: Prepare Ingredients

-thyme
-rosemary
-garlic
-parsley
-butter
-olive oil
-onion leaves
-mustard
-your favorite liquor

Step 2: Prepare and Marinate
this part is where your creativity kicks in.
in my first part , i made the lamb quarter into a crown roast and leg of lamb.
seasoned them generously with salt,smoked paprika and pepper and i let it sit in the fridge for 24hrs then topped with herb crust(parsley,thyme,rosemary,onion leaves) and ready to roast.
my second part, i had rack of lamb, leg of lamb and rib steaks. i seasoned the steak with kosher salt and pepper and i let it sit in the fridge for 48hrs. for my lamb, i seasoned them with smoked paprika, salt and pepper then garlic powder. i let it sit in the fridge for 24hrs. my lamb gets a second marinating to get it melt in the mouth tender. after the 24hrs rest i soak it in red wine, red wine vinegar, and rosemary for another 24hrs.
