Introduction: Coconut Chocolate Mousse (Only 3 Ingredients!)
This chocolate mousse recipe is crazy easy!!
You'll only need 3 ingredients: coconut oil, chocolate flavoured coconut milk, and ripe bananas.
The catch is it must be made in a high speed blender as this whips the air into the ingredients and creates the mousse texture.
If you can't get your hands on chocolate flavoured coconut milk, simply use standard coconut milk and you'll create a banana coconut mousse.

Step 1: Ingredients
Serves: 4
Prep time: 10 minutes
Chilling time: 30 minutes
2 ripe bananas
1 cup chocolate flavoured coconut milk
1/2 cup coconut oil, melted
Step 2: Melt the Coconut Oil
Gently melt the coconut oil by placing it in a heat proof bowl set over a pan of steaming water with the heat turned off.
This method melts the coconut oil but should keep it below 42ºC which in turn keeps it in it's raw form and the nutrients in the oil intact. Keeping the temperature low will also help the mousse set faster.
note: you can also melt the coconut oil in the standard way and the mousse will still work.
Step 3: Blend the Ingredients
Place the chocolate flavoured coconut milk and the banana into a high speed blender and blend until smooth.
Slowly pour the melted coconut oil in through the top while the blender is running.
The mousse should whip up and turn a lighter chocolate colour.
Step 4: Pour Into Serving Dishes
Pour the mousse into serving bowls and place in the fridge to set for 30 minutes.
Step 5: Serve
Serve the mousse chilled, topped with banana slices, coconut flakes and cacao nibs.
The mousse will keep in the fridge for up to 5 days, but is best eaten fresh on the day it is made.
