Introduction: Coconut Lime Fat Bombs

What could taste better in the summer heat than coconut and lime? These little tasty treats keep me away from all the salty and sweet snacks that my kids are addicted to. It feels so decadent to bite into one of these candy-like morsels. They are so rich and creamy! It keeps me satisfied until meal time.

Step 1: Gather Your Ingredients and Equiptment

1/2 cup Coconut butter--I never find it in the store so I make my own
1/4 cup Coconut oil
Zest of one lime
Juice of one lime
Sweetener of your choice--optional

Blender or food processor
Silicon mold or foil lined pan

I like the tangy lime so I don't use a sweetener. Since I started making these on a regular basis, I find that I actually don't want 'sweet' all the time now.

These are so easy that you can make several different batches very quickly. Next time I pick up oranges, I will try an orange coconut version. I already tried adding a tablespoon of my blackberry syrup instead of the lime and zest. It was delicious. They were a pretty purple/pink color. I would show you a picture, but they are all gone.

The lime zest gives these just a tiny bit of green color so you can tell them apart when you have several different containers in the refrigerator at the same time--or if you are sharing with friends.

Step 2: Blend, Mold, Chill, Enjoy

I usually start with unsweetened coconut and food process it until it becomes butter--just takes a few minutes. Add the coconut oil, zest, and lime juice. Process until it is fully incorporated. Taste. Sweeten if you think it needs it. You may add a pinch of salt--I don't. If you want a bit more texture, throw in a small handful of extra coconut and process for only a few seconds to mix it in.

I like to use my silicone molds but you can spread the mix in a foil lined pan if you don't have molds. Chill in the refrigerator until the mixture has hardened.

Un-mold or slice into small pieces. It only takes a small amount to satisfy my cravings. Store in the refrigerator in an airtight container. It will last a week or two (if no one else knows it is there).
