Introduction: Cottage Cheese Pancakes
Cottage cheese pancakes are an easy breakfast treat. These are much sweeter and arguably more delicious than your standard buttermilk pancake. However, these hardly use any sugar at all. While you can eat these with maple syrup, they go best served with sour cream and/or jelly (of just about any sort). I have been eating these since I was a child and must say they rank up there amongst my favorite foods. They are yummy.
Step 1: Cottage Cheese Pancake Ingredients
You will need:
1 cup cottage cheese
3 eggs
1/3 cup of flour
1 pinch of salt
2 Tablespoons sugar
2 Tablespoons melted butter
1 teaspoon baking powder
1/2 teaspoon vanilla
Step 2: Mix Pancake Batter
Combine all of the ingredients together in a bowl until it basically looks like pancake batter.
Step 3: Cook Pancakes
Cook the pancakes over a medium flame.
When you start to see large bubbles start to form, flip them over to cook the other side.
Serve with sour cream and/or jelly.

The recipe seemed a little "wet" to me. I doubled the flour and it they worked out great! Delicious!

Hey thanx for the reply's, I will experiment a little. My Father said you like buttermilk pancakes and they have lumps in them, so I will find out what I like best. Dad said cook me a few too...CB
