Introduction: Cotton Candy Meringues
I was sitting in my house one afternoon when I had a brilliant idea: what if I used cotton candy sugar to make meringues? So of course I had to try it (and they were delicious).
Ingredients:
-1/4 tsp cream of tartar
- 3 eggs (whites)
-1/2 cup cotton candy sugar
-1/4 cup cotton candy sugar
Prep:
Preheat oven to 200 degrees F. Cover a large cookie sheet in parchment paper (DO NOT grease, and DO NOT use wax paper.)
Step 1: Eggs and Tartar
Separate egg yolks from whites. In a mixing bowl, put the whites and the cream of tartar. Beat with an electric mixer until the mixture is white and frothy with tiny bubbles.
Step 2: Sugar and Peaks
Add granulated sugar and cotton candy sugar gradually while beating on medium-high until peaks form.
Step 3: Piping
Use a piping bag, or cut the corner off of a gallon-size Ziploc bag. Put all the batter into the bag and pipe onto the covered cookie sheet. Bake at 200 degrees F for 1 1/2 hours. After 1 1/2 hours, turn off the oven (DO NOT open it) and leave the meringues in the oven until they are hardened and cool (at least 2 hours, but preferably overnight).

I love everything cotton candy, can't wait to try this. I mean even the smell sends me higher than life. I have a few candles scented of it.
