Introduction: Courgette and Fennel Soup

This delicious courgette soup is made with chopped courgette, fennel, onions and potatoes, the soup is flavoured with garlic, rocket and parmesan, and blended till smooth. This winter warming soup is served with a sprinkled of chopped parsley and some warm crusty bread

Supplies:

Utensils

1 chopping board

1 large knife

1 large pan

1 chopping board

1 hand liquidiser

1 Garlic crusher

1 grater

1 jug

Ingredients

2 sprig fresh parsley

50 grams butter

1 courgette

100 ml double cream

1 bulb fennel

1 cloves garlic

1 onion

20 grams parmesan or pecorino cheese

150 grams potatoes

20 grams rocket leaves

1 stock cube veg

750 ml water (boiling)

salt and black pepper to taste


Step 1:

peel and slice the potatoes

peel and chop the onion(s) finely

wash and slice the fennel into strips

peel and crush the garlic using the garlic crusher or chop finely

Step 2:

heat the butter in a pan

add the onions, potatoes, fennel and garlic to the pan, cook until soft

Step 3:

boil the water and add to the stock cube

add the stock to the pan

Bring to the boil and boil for a few minutes

simmer for 15 minutes

Step 4:

wash and dice the courgettes add to the pan

add the rocket to the pan

cook for 5 minutes

Step 5:

remove the pan from the heat

using a hand blender liquidise the soup until smooth

Add the cream to the soup

Return to the heat and warm gently do not boil

Step 6:

grate the parmesan

add the cheese to the soup

stir to mix the ingredients

season with salt and pepper

ladle the soup into serving bowls

Step 7:

Chop the parsley

sprinkle on top of the soup to serve

    looks really tasty, and vegetarian also. I don't get all the ingredients where I live, but I'll try with replacements.

    I want to make this soup, it sounds delicious! BUT:
    1) I don't have double cream (and don't want to go out and buy it as I've just done my weekly shopping) Q: can I use sour cream?
    2) you say we need 1 courgette but as courgettes come in all sizes these days would you say it matches the volume of the potato?
    3) I don't have a fennel bulb, I do have celeriac or is it ok to leave it out?
    4) No Parmesan cheese, ok to use grated cheddar?
    Have everything else (apart from rocket, but I do have a lettuce plant in a pot on my balcony lol!
    PS; in step one you show the potato peels, do we include them in the recipe?

    1 you will probably get away with using the sour cream but put less than the amount of double cream I would add a bit at a time and taste you will need to add it slowly as it might curdle. Maybe you could add a dollop of sour cream when you serve the soup instead rather than put it in the soup
    2 yes match the potato and courgette amounts
    3 you could try celeriac, if you have any fennel seeds you could add these as well, grind them a little begore you add them
    4 yes but put less cheese in and grate finely
    5 I don't think lettuce will work lol so leave that out
    no you don't put the potato peel in but thanks for the feed back I will think about not adding the peeling in the photo in the future.
    I am not sure the soup will work with these changes lol but if you give it a go let me know what it tastes like as an alternative
    I have a celeriac soup recipe https://socook.co.uk/recipes/butter-bean-celeriac-... which might work better with the ingredients you have, you can swap the butter beans for any white beans. My website has pictures the same as Instructables I just haven't had time to put it on the site yet
