Introduction: Cowboy Caviar (Salsa)

Looking for a hearty salsa that can be eaten as a snack and as a side for your dinner? Cowboy Caviar appeals to all sorts of tastes and it does not take long to make at all. Here are the few steps and ingredients needed to make this delicious concoction.

Step 1: Prep Work

First, start by getting your beans together. We used canned chick peas and black beans (just because we did not feel like cooking them) but you can choose the beans that you enjoy the most. We were making this for four people and it has lasted two different meals so far, so the amount of beans is usually one or two cans of each. Dice up a whole onion and pour an entire can of Rotel diced tomatoes into the bowl and proceed to mix it all up.

Step 2: More Ingredients

Take a bit of cilantro and dice it up also; a little tip for when you dice it up, do not break off the stems but rather bend them in half to dice. This helps release the flavor and makes dicing easier. After you add that, go ahead and dice up a jalapeno and a serrano pepper; you can either take out the seeds and veins (which takes away the hotness of the peppers) or leave them in if you enjoy a little spice. After you mix in the chopped items, go ahead and mix it up again. Now time to add some outside flavor. Sprinkle on some garlic powder, salt (very little), and black pepper, doing all of this to taste. Then go ahead and take some balsamic vinaigrette and pour it on there, tasting as you go along. Sometimes the chick peas will absorb a lot of the extra juices and the caviar will seem dry. If this happens, pour a little extra virgin olive oil on it and then mix in some more vinaigrette and you should be good.

Step 3: Enjoy!

After all the steps are done, you can finally enjoy it. Making this should not take long and can involve everyone in the family, so have some fun with it. It tastes great by itself or scooped with tortilla chips. After you are done making it, put it in the refrigerator to enjoy later (if it lasts that long).
