Cranberry Orange Yellow Cake Mix Cookies

How to make cranberry orange cookies using a box yellow cake mix

Supplies

1 Box of Yellow Cake Mix
1/2 Cup Oil
2 Eggs
1/3 Candied Orange Peels (Chopped)
1/2 Cup Dried Cranberries

Step 1: Mixing the Ingredients

In a large mixing bowl, combine the cake mix, oil, and eggs. Stir until smooth. Fold in the candied orange peel and the dried cranberries. For best results, soak the cranberries in about a cup of water for 30 minutes then strain and pat dry with a paper towel or cloth before adding to the mix. After everything is mixed together, refrigerate the dough for half an hour.

Step 2: Baking

Preheat the oven to 350°F. Roll the dough into balls roughly the size of a golf ball. Place 2 inches apart from each other on a greased or lined baking sheet. Lightly press dough until top is flat. Bake for 10-12 minutes. Let cool on a wire rack. Makes about 2 dozen.
