Introduction: Crazy, Lemony Rainbow Bites!

Shortbread is yummy, crisp, buttery, easy. Lemon is yummy, tart, bright, happy. But rainbows, are MAGIC! And when you can eat them they are so unbelievably epic, you might die.(just kidding! :P) 

But seriously, what is wrong with the person who DOESN'T want to eat happy, sunshiny, buttery rainbow fragments?

Ingredients:
1 stick of butter
1/2 cup sugar
1/2 an egg (I often cut recipes in half, so I usually have 1/2 on hand, but I understand no one else does so you could either double the recipe and freeze whatever  dough you don't use, or lightly whisk the egg and pour half in the batter)
1/4 tsp vanilla extract
1 1/4 cups flour
Zest of 1 lemon and a few drops of lemon juice
a rainbow of food coloring!
sprinkles(optional)

Cream butter and sugar. 
Add egg and vanilla
Slowly add flour
Roll the dough out into a long, skinny cylinder and cut it into 6 sections
Use your hands to gently work a few drops of food coloring into each section
Roll each section into a less than 1/4 inch thick rectangle and stack them into backwards rainbow order(purple, blue, green, yellow, orange, red)
If desired, cover one or both sides in sprinkles 
Wrap in aluminum foil and freeze for 10 mins.
Preheat your oven to 350 degrees
Place the rectangle on an aluminum covered cookie pan and make 1/4 inch slices and then cut them into rainbow squares. You could also curve entire slices into complete rainbows! Yay
Bake until they just barely don't even begin to turn slightly golden on the edges
