Intro: Frugal Food: Creamy Bacon Pasta Bake

This creamy pasta bake is super kid-friendly, freezes well and you can literally put whatever you want in it. I've used extra-light cream in this one so it's a little less indulgent, but you can use whatever you prefer. 

This pasta bake will make 4 generous servings.

The ingredients you require are:

Enough pasta of your choice to serve 4 people
4 rashers of bacon
200ml of cream
Half a brown onion
3/4 cup of frozen baby peas
1 small can of corn kernels
1 tablespoon of garlic
1 tablespoon of wholegrain mustard
A handful of grated cheese
Diced shallots (to serve)

STEP 1: Step 1

Preheat your oven to 180 degrees celsius.

Put a large saucepan on medium heat on the stove. Put another pot of water on high and add the pasta once the water has boiled.

Finely dice the onion and add it to the saucepan with the garlic. Sauté until the onion turns clear.

Dice the bacon and add it to the saucepan, with the peas and corn. 



STEP 2: Step 2

Once the peas have defrosted and the bacon has started to brown a little, turn the heat down to low on the saucepan.

Add the cream and the mustard and stir. 

Add salt and pepper to taste. 

STEP 3: Step 3

Once the pasta has finished cooking, drain it and add it to the saucepan with the cream mixture. 

Stir until it is all mixed together. 

Put the whole lot into a oven-proof dish and sprinkle with cheese and shallots. 

Put it in the oven for 15-20 mins or until the cheese is completely melted.

Serve.

I think you meant scallions (green onions) not shallots... you have scallions in the photos. BUT it looks delicious and I can't wait to try it!

Ok, I feel like an idiot for having to ask but this looks really good and like something I would like to make. What is a "rasher" of bacon, I've never heard of a "brown onion" before, and what exactly is "whole grain" mustard. I cook but I don't have great variety in my recipes.
Hi there! Don't worry about it at all. A rasher of bacon is just one slice of bacon. You can buy them either in vacuum-sealed packs or at the deli by the slice. A brown onion is just a regular, standard onion that you would use for most things - not a red onion (spanish onion) or anything else. It has brown skin on the outside. Whole grain mustard is that really seedy mustard that you see in shops - not like the mustard you would put on a hot dog. Does that help?
Yeah, that helps a lot. All stuff I'm pretty familiar with then, just not terminology I'm used to. I definitely want to try this sometime now that I know how common the ingredients are. Thanks.
