Introduction: Crispy Salmon With Strawberry Basil Salsa (in Less Than 20 Minutes)
This is a great quick and easy salmon dish that takes less than 20 minutes to make. My husband loves the crispiness of the salmon. I love that it's a healthy meal that is easy to make in a short amount of time. This recipe can also be found at gardengirlrecipes.com.
Ingredients:
12-16 ounces salmon filet, skin on
2 tablespoons oil
salt
for the salsa:
2 cups strawberries, small diced
¼ cup red onion, small diced
½ cup loosely packed fresh basil leaves, julienned
¼ cup loosely packed fresh mint leaves, julienned
1 tablespoon red wine vinegar
1 tablespoon olive oil
salt to taste
Step 1: Heat Oil
Heat the coconut oil in a skillet over medium high heat.
Step 2: Season & Cook Salmon
Season the salmon with salt on all sides and cook it skin side down in the pan for 3-4 minutes. Then flip it over and cook for another 3-4 minutes.
Step 3: Make Salsa
In a medium bowl, combine all the ingredients for the salsa. Season with salt to taste.
Step 4: Assemble
Spoon the salsa over the salmon and serve immediately.

Me neither, but it tastes great. Turns out there are many different fruit and protein combinations that work well together.
