Introduction: Sourdough Cinnamon Apple Muffins

As the leaves hit the ground this fall season, one thing is guaranteed at my mom’s house: an endless supply of apples. Thankfully, her famous sourdough bread comes with the season too. So with a sourdough starter nearby and a mountain of apples on hand, only one thing comes to mind.

Do you have apples starting to soften? This apple muffin recipe makes the perfect on-the-go breakfast or a delicious treat before bed.

Supplies

Tools:

  1. Two medium sized bowls
  2. Hand or bowl Mixer
  3. Spatula
  4. A muffin pan
  5. Muffin liners
  6. Measuring cups- 1 cup, 1/2 cup, 1/3 cup, 1/4 cup, and a teaspoon.


Dry Ingredients:

  1. 1 3/4 cup diced apples
  2. 1 3/4 cup flour
  3. 3/4 cup granulated sugar
  4. 1/2 cup brown sugar
  5. 1/2 cup softened butter
  6. 2 teaspoons baking powder
  7. 1 1/2 teaspoon cinnamon
  8. 1/2 teaspoon salt


Wet Ingredients:

  1. 2/3 cup sour cream
  2. 1/4 cup milk
  3. 1/4 cup sourdough discard
  4. 2 eggs
  5. 1 teaspoon vanilla extract


Crumble topping:

  1. 2 tablespoons butter
  2. 1 teaspoon cinnamon
  3. 1/3 cup flour
  4. 1/3 cup sugar
  5. Caramel topping (optional)

Step 1: Combine Butter and Sugar

In one of your medium sized bowls, add 1/2 cup softened butter along with 3/4 cup granulated sugar and 1/2 cup brown sugar. Once in a bowl, beat the mixture with a hand or bowl mixer until it creates a crumbly texture.

Step 2: Mix in Wet Ingredients

Mix in 1/4 cup milk, 2/3 cup sour cream, 1/4 cup sourdough discard, 1 teaspoon vanilla extract, and 2 eggs. Use the same mixer until all ingredients are combined into a smooth liquid consistency.

Step 3: Fold in Dry Ingredients

Next, using a spatula, fold in 1 3/4 cup flour, 1 3/4 cup apples, 2 teaspoons baking powder, 1/2 teaspoon salt and 1 1/2 teaspoon cinnamon. Be sure to not over mix, it’s okay if the batter is lumpy.


Step 4: Create Streusel

For the streusel, combine 2 tablespoons softened butter, 1/3 cup flour, 1/3 cup sugar, and 1 teaspoon cinnamon. Stir until evenly mixed.

Step 5: Pour Batter and Bake

Lastly, scoop ¹⁄₃ cup of the muffin batter into each muffin liner and add about 1 tablespoon or streusel to the top. This will create a perfect dozen. Bake at 400* for 17-18 minutes. Once completed add your caramel topping and enjoy.
