Introduction: Cucumber Salad

It is summer and the perfect time to think about fresh cucumber salad. This dish is great for outdoor barbecues, camping, or just hanging around enjoying a light lunch. I love fresh cucumbers from the garden and this recipe is a garlic-fueled delicious treat that everyone will love. This makes a great side dish for any entree so whip some cucumber salad up today and you will be amazed at how refreshing and delicious this salad is.

Step 1: Cucumber Salad Ingredients

3 large cucumbers

1 box cherry tomatoes

½ onion chopped thin

2 tbsp fresh parsley or basil

1 or 2 c. Garlic Expressions Classic Vinaigrette Salad Dressing & Marinade

Step 2: Peel the Cucumbers

Peel the cucumbers and chop into ½ inch squares. If you like you can remove the seeds from the cucumbers by cutting the cucumber in half the long way, then take a spoon and scoop out the seeds.

Step 3: Chop Tomatoes

Chop the tomatoes into ½ inch squares, remove seeds.

Step 4: Chop Onion and Basil

Finely chopped onion and parsley or basil.

Step 5: Toss Ingredients

Toss all ingredients into a bowl and toss well.

Step 6: Refrigerate

Set in refrigerator for at least 30 minutes before serving.
