Introduction: Deluxe Peanut Butter Cookie Sandwiches
These peanut butter cookie sandwiches are an absolute delight!
Inspired by ‘Christie’ brand Nutter Butter cookies, I wanted to create my own homemade version using my favourite peanut butter cookie recipe.
Nutter Butter cookies are two wafers of peanut butter cookies that sandwich a peanut butter filling. These have typically only been sold in the United States (as far as I’m aware), but they have finally made it to Canada.
My homemade version is the perfect mix of soft and crisp, adding a peanut butter filling truly brings them up to the next level.
Amp the sandwiches up even more by adding a drizzle of semi-sweet chocolate!
This recipe makes 16-18 sandwiches, meaning there is a plenty to eat and even a few to spare if you’re in the sharing mood!
Step 1: Ingredients
This recipe is divided into 3 sections: Cookies, Filling & Topping.
Here is what you will need for each:
- 1 1/4 cup all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, at room temperature
- 1/2 cup creamy peanut butter
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 large egg
- 1/2 tsp vanilla extract
- 1/2 cup creamy peanut butter
- 3 tbsp unsalted butter, at room temperature
- 2 tbsp maple syrup
- 1 tbsp icing sugar
- 1/3 cup semi-sweet chocolate chips
Step 2: Cookies - Mix Dry Ingredients
Use the quantities noted under the cookie ingredients – dry mixture.
In a medium bowl, whisk together the flour, baking powder, baking soda and salt. Set aside.
Step 3: Cookies - Mix Wet Ingredients
Use the quantities noted under the cookie ingredients – wet mixture.
In a large bowl, using an electric mixer, beat together the butter, peanut butter, granulated sugar and brown sugar. Beat until light and fluffy.
Add in the egg and vanilla, mixing until blended.
Step 4: Cookies - Combine Wet and Dry Ingredients
Add the dry flour mixture to the wet peanut butter mixture and beat using the electric mixer until combined. Try not to over mix. You want the flour mixture to be just fully incorporated.
Step 5: Prep Oven and Baking Sheet
Preheat oven to 350°F. Line a baking sheet with parchment paper.
Step 6: Get Rolling
Measure out one teaspoon of dough. Roll the dough into a ball using the palms of your hands. Place on the parchment paper lined baking sheet.
Continue rolling out balls of dough, placing two balls side by side and leaving 2 inches in between pairs of dough. The two balls that are side by side should have a slight space in between them. See photos for reference.
Step 7: Flatten
Using a fork, flatten each ball in a criss-cross pattern. Doing this should merge the pairs of dough that are beside each other.
For this step, I like to keep a cup of water close by to dip the fork in. This prevents the dough from sticking to the tines of the fork. Dip the fork after flattening each cookie.
Step 8: Bake Cookies
Transfer the baking sheet, with the flattened cookies on it, to the oven and bake for 7-9 minutes. The cookies should be slightly golden.
Remove from oven and let cool on the baking sheet for 5 minutes.
Transfer cookies to a wire rack to cool completely.
Repeat steps 6 to 8 for the remainder of the dough.
Step 9: Make Filling
While the cookies are cooling, you can begin making the filling.
Use the quantities noted under the filling ingredients.
In a medium bowl, using an electric mixer, beat together the peanut butter, butter, maple syrup and icing sugar. Mix until fully combined.
Step 10: Make Sandwiches!
Once the cookies have cooled, take a cookie and flip it over so it is bottom side up. Spread an even layer of filling onto the cookie bottom. Place another cookie on top, creating a sandwich.
Repeat with the remaining cookies.
For this, I used a little rubber spatula to spread on the filling. The cookies can be a little delicate, so be careful if using a knife to place the filling on.
The sandwich cookies are now complete. But if you’re a fan of chocolate and peanut butter then you’ll want to continue on to the next step!
But if you say ‘no way!’ to the combo then stop right here and enjoy in the beauty and deliciousness of the peanut butter cookie sandwiches you just created.

Step 11: Freeze Cookies
Place cookies back on the parchment lined baking sheet and transfer to the freezer for 10 minutes. This makes dipping or drizzling the chocolate easier.
Step 12: Melt Chocolate
To melt your chocolate quickly and easily, place chocolate in a microwave safe bowl and microwave in 30 second increments for about 1.5-2 minutes, stirring after every 30 seconds until chocolate is smooth.
Step 13: Chocolate!
You can either dunk your cookies in chocolate or drizzle them. I went the drizzle method.
Step 14: Enjoy

Store any remaining cookies in an airtight container for up to 5 days.
