Introduction: EASY LEMON CURD RECIPE

Step 1: MIX

4 Large Eggs

4 Large Egg Whites

220g Caster Sugar

The Zest & Juice of 3 Large Lemons

Whisk the eggs, sugar, lemon juice and zest in a large glass bowl.

Step 2: HEAT

Boil some water in a large saucepan and rest the glass bowl on top. Continuously stir the mixture until it thickens and coats the back of a spoon.

Step 3: STRAIN

113g Unsalted Butter (Cubed)

Once thickened, strain the mixture to remove any zest and lumps. Add the butter and stir into the mixture. Store in an air tight jar for up to 1 week.
