Introduction: Easiest Tomato Soup

If there's one thing I love about cold weather, it's soup! So today I'll be sharing my tomato soup recipe. Meet my go-to Tomato soup! This homemade tomato soup is healthy and tastes fantastic. I absolutely adore soup. I love making it, I love eating it. Tomato soup is an excellent source of antioxidants, including lycopene, flavonoids, and vitamins C and E, among many others. Soup can simply fit in anytime. Not only is it good for cold, cough and flu but also helps in losing weight. The best part, it can be made with a few ingredients and is super easy to make. Do try this. So let's get started with the recipe.

Supplies

Supplies:

  1. Butter.
  2. Cinnamon stick.
  3. Black peppercorns.
  4. Black Cardamom.
  5. Garlic.
  6. Onion.
  7. Tomato.
  8. Salt.
  9. Black pepper.
  10. Sugar.
  11. Corn Flour.
  12. Fresh Cream.(optional)

Step 1: Chopping

  1. Chop about 500 grams (4-5 medium sized) tomatoes.
  2. Finely chop 1 onion.
  3. Finely chop 3-4 cloves of garlic. (I forgot to add garlic)
  4. You can also add a tiny piece of ginger if you like.

Step 2: Sautéing

  1. In a pan, Take 1 tbsp of butter (You can use oil too). Adding butter will enhance the taste of the soup.
  2. Let it melt.
  3. In the butter add 1 cinnamon stick, 1 bay leaf and 5-7 peppercorns and 1 black cardamom and sauté it.
  4. Cook it for a few seconds.
  5. Add the chopped garlic and chopped onion.
  6. Fry it for a few minutes till the onions become soft.

Step 3: Tomatoes

  1. Once the onions are translucent, add the chopped tomatoes.
  2. Add salt as per taste.
  3. Mix everything well.
  4. Cover and cook for about 4-5 minutes till the tomatoes get soft.
  5. After 5 minutes check if the tomatoes are cooked, if not cover and cook for another 3-4 minutes.
  6. Once the tomatoes are done turn off the flame.
  7. Let the mixture cool down.

Step 4: Blending

  1. Remove the cinnamon stick and bay leaf and black cardamom from the mixture.
  2. Once the mixture is cool, transfer into a blending jar.
  3. Make a puree out of it.
  4. Take a bowl and a strainer. Strain the puree with the help of a spoon.(Optional step)

Step 5: Making Soup

  1. Take the same pan.
  2. Add the strained puree to it and give it a quick mix.
  3. Add water to reduce the thickness as per your liked soup consistency. (I have added about 2 cups)
  4. Add salt as per taste. (Remember we have already added salt before)
  5. Add 1tsp sugar and 1 tsp black pepper powder and mix well.
  6. Let it boil.
  7. Cover and cook for 3-4 minutes more.

Step 6: Slurry

  1. In a small bowl take 1 tbsp of corn flour and 1/4 cup of water and make a slurry.
  2. Add this slurry to the soup gradually while continuously stirring the soup.
  3. Make sure there are no lumps formed.
  4. Cook for another 2-3 minutes. Turn off the flame.

Step 7: Ready

Tadaaa! Our tomato soup is readyyy.

Serve it hot and garnish it with some fresh cream(Optional).
