Introduction: Easy Apple, Cranberry and Almond Strudel
Who doesn't like apple pie? Here is a very quick recipe for an apple strudel that is great as a snack, dessert or part of brunch. Assembly time is about 10 minutes with a 35-40 minute cook time.
Step 1: Ingredients and Utensils
You will need the following ingredients:
- Box of puff pastry sheets
- 2-3 apples, depending on size
- Juice of 1/2 a lemon
- 0-1/4 cup of sugar, optional. Use sugar with tart apples.
- 1/4 cup dried cranberries or raisins. Raisins go better with tart apples.
- 1/2 cup almond meal
- Cinnamon to taste
- Powdered sugar
Also, you will need the following utensils:
- Peeler
- Measuring cups
- Grater or food processor for shredding apples
- Measuring cups
- Mixing bowl
- Spoon
- Fork
- Baking sheet
- Parchment paper
Step 2: Peel and Shred the Apples
Using a peeler, peel the apples and with a grater or food processor, shred the apples. If they are very juicy, drain the juice.
Step 3: Mix the Apple Filling
In a mixing bowl mix the apples, lemon juice, sugar, cranberries and almond meal. Mix until everything is blended well.
Step 4: Assemble the Strudels
Take half of the mixed apple filling and spread it out on one of the puff pastry sheets. Fold over the puff pastry dough until you get a nice wrap. With a fork mash together the ends to close the strudel. Repeat with the second puff pastry sheet and remaining half of the apple filling.
Step 5: Bake & Cool
Transfer the strudel to a baking sheet lined with parchment paper. Bake on 400F for 35-40min until golden. Let cool at room temperature for at least an hour. Sprinkle with powdered sugar.
Step 6: Serve and Enjoy!
Cut the strudel with a bread knife and serve warm or cold. Enjoy!
