The other day while making Krispy Kreme Donuts in the office, I found myself with a big pot of oil and some leftover ingredients.  That plus some apples left over from making cider inspired me to try my hand at apple fritters!  (Ok, so it was another coworker who came to me and said "make apple fritters."  What could I do?).  I never would have thought to make these if not for the gentle prompting, and I'm so glad I finally did.  These apple fritters are SO simple to make, and taste just amazing.  Plus, the bite-sized nature of them doesn't make you feel so bad for gobbling up a dozen!  It's almost like they don't count for being so small.  So gather up some ingredients (that you probably already have on hand!), and give these easy apple fritters a try.  It's the perfect treat for a chilly night!

INGREDIENTS

1 cup all purpose flour
1/4 cup sugar
3/4 teaspoon salt
1 1/2 teaspoons baking powder
1 teaspoon cinnamon
1/3 cup milk
1 egg
1 cup chopped apple

DIRECTIONS:
Mix together all of the dry ingredients.  Then stir in the milk and egg until just combined.  Stir in chopped apple.  Your dough is ready!

Heat about 1 1/2" of oil in a large pot to about 350F (180C).  Use two teaspoons to carefully drop in small blobs of the dough (one spoon to scoop the dough, the other to scrape it off into the oil).  More than a heaping teaspoon, and it won't cook all the way through before turning really, really dark brown on the outside.

Cook about 2 minutes per side. Transfer to paper towels or a rack to drain and cool.  You can add a glaze to these if you like, but they're pretty good plan too!

How easy was that?
