Step 2: Blend Those Ingredients.

Preheat the oven to 350 F/176 C.

Add the oats, sugar, cinnamon, baking soda, salt, milk, eggs, banana, and honey to a food processor or blender and blend for 20 to 30 seconds.

Easy as that, the batter is ready. Remove the lid and use a spatula to scrape the sides of the food processor bowl or blender.

Step 3: Bake and Serve

Spray two small bread loaf pans with cooking spray or use 1 4x8-inch pan. You can also use shortening or butter on the sides and bottom of the pans.

Pour the batter into each until they are equally filled. Sprinkle on the chocolate chips if you would like to use those, you can also use something like craisins or raisins. Maybe even some walnuts or pecans.

Then bake on the middle rack for 25 to 35 minutes until a toothpick comes out clean.

Let cool for 10 minutes or so in the pans, then remove. Serve still warm or let cool on a wire rack the rest of the way.

Enjoy!

My daughter and wife are both allergic to bananas. How much would it effect the recipe if you just left the banana out?
    Thanks,

It would a little bit, just replace the banana with a half cup of applesauce. :)

FYI, not all oatmeal available in the market is gluten free. It is often cross-contaminated with wheat, rye or barley. (Quaker is big for this) Shared mills and/or nearby fields. There are gluten free varieties available. My favorite, and the easiest to find is Bob's Red Mill. They have both quick-cooking and old-fashioned rolled oats in certified gluten free bags at most grocery stores.
