Introduction: Easy Chipotle Cilantro Lime Rice Copycat
This recipe is for the delicious rice you find at Chipotle or Qdoba Mexican restaurants. It's inexpensive and very easy to prepare at home. Just 5 ingredients. This can be made in advance or eaten fresh from the pot.

Step 1: Rice: Measure, Wash, Push a Button and Forget It.
Ingredients
3-4 cups uncooked jasmine rice
1 lime
1/2-tsp salt
2 T canola oil
1 half bunch fresh cilantro leaves
rice cooker
The rice for this recipe needs to be a bit drier to have the correct consistency. If the rice is too wet, it will break when mixed and be sticky. The ideal rice to use is Basmati, however, I used Jasmine rice with no problems.

Step 2: Chop, Squeeze, Mix and Enjoy!
This dish is best served the first day. The next day the rice might be a little dry. Simple add a little water and gently reheat. I hope you enjoy this as much as I did... I ended up eating at least 4 cups right away. And yes, I had a stomach ache. But I was happy :)

Hello, i am from Mexico, and we use some different tricks to do a better rice, letme share to you:
- After washing the rice (step 1), we fry the rice with 4 of 5 spoons of oil. Move the rice constantly to avoid burn.
When the rice it's ready it pops (looks like a little popcorn) then it's ready to add the water, but we make a mix of 1 garlic and 1/4 of onion, (if you want you can mix the cilantro and taste really good), then added the mix to the rice and continue with the second part of Step 2.
