Introduction: Easy Focaccia Bread Personal Pizzas

We've all been there: It's late, you're hungry, and you're not sure what you could make quickly without just picking up take-out. No worries! This Focaccia Bread Pizza recipe is fun, simple to make, and can be finished in under 30 minutes!

This meal is a staple in my household, we make it at least twice a month. The best part about this recipe is that it's easy to customize with your own favorite toppings. Each serving is personalized for you and by you... no more squabbles over pineapple.

Here are the ingredients. Keep in mind that one loaf of bread makes approximately two personal pizzas. You can find focaccia bread easily at your local grocery store's bakery. This can be a great "middle of the week," recipe if you're on a budget, since leftover veggies can wind up being toppings. I've used leftover meat sauce from spaghetti on more than one occasion. Feel free to use as much cheese as you like, but I recommend at 1/2 cup per pizza.

Ingredients

  • 2 Focaccia bread loaves
  • 16oz can or jar of tomato sauce
  • 2 Cups shredded cheese
  • Any other toppings you like!

Step 1: Preheat the Oven and Prep Your Crust

Preheat the oven to 350 F°. While the oven warms, you can begin prepping your crust.

Simply unwrap the bread and slice carefully across the middle to separate the top and bottom. Think of it like making an enormous hamburger bun. Once the halves are split, you can lay them in a pan with the raw edge showing.

Step 2: Sauce

Remember, canned or jar sauce will do just fine.

Take a large spoon and spread the about 2-4oz of sauce onto each half of the bread. How much you use is up to you. Keep in mind: Focaccia bread is very spongy and will absorb a lot of moisture. Don't be afraid to go a little heavy.

Be sure to leave the edges dry for your "crust." Otherwise, you'll have nowhere to hold onto your slices.

Step 3: Cheese

Now hit it with the cheese! I recommend 1/2 cup per pizza for full coverage. I recommend taking a pinch out beforehand and setting it aside to help "glue" the toppings on later.

Step 4: Toppings!

Top your pizza however you like. This can be a fun family activity which allows the younger members to feel like they helped out with the cooking. If you have any extra cheese, sprinkle a little extra on top to help hold the toppings in place.

Step 5: Baking

Once the oven is at 350F°, place your pizzas on the middle rack and bake for 15 minutes.

Step 6: Enjoy!

Once the pizzas are heated and crispy, you can take them out of the oven, cut, and serve! Top with Italian seasoning or red pepper for a little extra flavor!
