Introduction: Easy Homemade Pasta
There are few recipes that are as cheap, and as satisfying, as homemade pasta. All you need is flour, eggs, and water to make the noodles, and the sauce can be as simple as butter, garlic, salt and pepper.

Step 1: Making the Dough
In a large bowl, mixer, or food processor, mix together:

just enough cold water to pull the dough together into a ball

Step 2: Getting Ready to Roll
Place the dough on a well floured board, adding more flour if the dough starts to stick.
Step 3: Rolling
Roll out gently, rotating the dough 90 degrees every few strokes, until the dough is about as thick as a dime. Be generous with flour if the dough sticks to the board or the rolling pin.
Step 4: Cutting the Noodles
Roll the dough up from either side so the two parts meet in the center, and cut into strips
Step 5: Cooking the Noodles
Slide your knife under the noodles, and lift, and the should separate nicely.
Add a bit more flour and lightly toss the noodles so that they don't stick together.
Too cook, drop the noodles in a pot of vigorously boiling salted water. How much salt? Enough so that it tastes like the sea.
You can boil your noodles right away, or cover them and put them in the fridge to cook later. Fresh noodles only take 4-5 minutes, so don't overcook them.

When your noodles are almost, but not quite completely cooked, add them to the pan you have your sauce heating in, and finish them there, adding water from your cooking pot as needed.
