Introduction: Easy No Bake Cheesecake

In this instructable I will show you how to make a no bake cheesecake. This no bake cheesecake recipe is really easy to make with very few ingredients and it turns out amazing! Again no baking required! If I can do it you can do it, go out there and make your own. Let's get started!

Step 1: Ingredients/Tools

  • 20 sheets of graham crackers or 40 squares (310g)
  • 11 tablespoons of unsalted butter (174g)
  • 2 tablespoons of sugar (25g)
  • 16 ounces of softened cream cheese (room temp.) (452g)
  • 1 can (14 ounces) of sweetened condensed milk (396g)
  • 2 Tbsp. of fresh lemon juice (30ml)
  • 1 tsp. of vanilla extract (5ml)

Step 2: Melt the Butter

First let's melt the butter, I am going to do this in the microwave on high for about 30 to 45 seconds.

Step 3: Create Graham Cracker Crust/Base

Now let's add our graham crackers in a food processor if you don't have a food processor and do not want to buy one, you can use a large plastic bag and place the graham crackers in there and then mash away with a rolling pin. Then turn the processor on until the crackers or nice and blended. Then add our sugar and our melted butter, now turn the processor on and mix until the butter is all incorporated and it resembles damp sand. Or if using the bag, after placing the sugar and butter in there, shake it all around. :) Kind of fun actually that method.

Step 4: Add Cracker Base to Pan

Now we add our graham cracker base to a springform pan. Use your fingers or the bottom of a glass or measuring cup to firmly push the cracker base down, then push it up on the sides as well. After you are done, place it in the freezer for at least 10 minutes.

**You can optionally use a pie pan as well. You may need to use less of the graham cracker base, in that case, just take a cupcake pan with some paper cups and make some mini cheesecakes.

Step 5: Blend the Cream Cheese

Next let's blend our cream cheese with a hand or stand mixer. Then if needed use a spatula to get the cream cheese out of the beaters.

Step 6: Add, Mix, Add, Mix, Scrape, Mix

Now we add our lemon juice, vanilla extract, and about a 4th of our sweetened condensed milk. Then turn on the mixer and mix it all together, then add another 4th of the sweetened condensed milk and mix again, etc. until all of the sweetened condensed milk is added, leaving a nice smooth cheesecake filling.

Step 7: Pour and Spread

Now pour the filling into your pan and spread out the top to level it. There you go! Now just place it in the refrigerator for about 3 hours to set.

Step 8: Remove and Serve

Once the no bake cheesecake has set, let's remove the spring form pan. Now top it however you like, you can cover the whole top, or just do it by the slice. I am adding some cherry pie filling to the top of my slice. It is really easy to make! Enjoy!
