Introduction: Easy Teriyaki Chicken on Rice

Teriyaki chicken is a dish favoured by millions of people all around the world and although it isn’t in the same shape of a normal piece of sushi, it is just as fresh and delicious! Teriyaki is a cooking technique in Japanese culture in which foods are broiled or grilled with a glaze of soy sauce, mirin and sugar. Today I have decided to subtract the Mirin from the sauce and add Kecap Manis. I did this because Mirin contains high amounts of sugar and a little bit of alcohol.

Japanese food is one of my favourite types of food. I especially love sushi, but I find it takes a long time to make. That is why I have chosen to make this dish. It's a faster alternative to making sushi at home, and it is just as tasty, if not more so.

Follow the steps below to make yourself a serious crowd pleaser! I hope you love it as much as I do, and that you soon share my love of Japanese food too.

Supplies

2-3 pieces of boneless chicken breast

2 cups of white rice (you could use brown rice if you wanted)

6 cups of water (to cook the rice in - you may need more or less, depending on your method of cooking the rice)

2 tablespoons of oil to brown the chicken breasts

The Chicken Marinade Ingredients:

8 Tablespoons of soy sauce

4 Tablespoons of Kecap Manis

2 teaspoons of brown sugar (optional)

To finish/garnish the dish:

Japanese mayonnaise - but you can use any type of mayonnaise you like

Cut up vegetables (optional) 1/2 capsicum, 2 carrots and 1/2 telegraph cucumber


Step 1: Cut Your Chicken

You Will Need:

  • A sharp knife to cut chicken with
  • A chopping board
  • 2-3 chicken breasts
  1. First, you will need to gather your ingredients and once you're done that start to cut up the chicken breast.
  2. To do this you need to get your clean chopping board and place it on a sturdy benchtop.
  3. Get your sharp knife and chicken breasts. Carefully cut the chicken into even pieces. You can do this by cutting the breasts into strips and then into even pieces.
  4. Once that is done immediately wash your hand with soap and water. Give your hands a good clean. This is to avoid you getting sick.
  5. Now go and wash your chopping board and knife in hot soapy water.

Step 2: Cook Your Chicken

You Will Need:

  • Your chopped up chicken
  • A frying pan
  • An element
  • 2 Tablespoons of oil
  • 2 teaspoons of brown sugar (optional)
  • 4 Tablespoons of Kecap Manis
  • 8 Tablespoons of soy sauce
  • A small bowl
  1. Get your frying pan and turn it up to a high heat.
  2. Add in your oil. You will need to be very careful when putting your chicken as your oil may jump about.
  3. Once there is chicken in your pan stand over and stir it for 5 minutes.
  4. Once you have stirred it, place a lid on your pan and start to make your sauce to go over the chicken.
  5. To make the sauce mix you Kecap Manis, Brown sugar and Soy sauce in a bowl.
  6. Now that the sauce is made, go to your chicken and keep on cooking it and stirring it for 10 minutes or until cooked and white inside. If you can see pink in anyone of the Chicken pieces continue cooking.
  7. Finally, turn off the chicken.

Step 3: Prepare/cook Your Rice

You will need from the ingredients list

  • 2 cups of rice
  • 6 cups of water
  • A rice cooker or a pot and an element
  • A Sieve
  1. Get your sieve or something to wash your rice with.
  2. Wash your rice in water. Try to wash all of it
  3. Place your cleaned rice and 6 cups of water in your rice cooker or your pot
  4. Turn your element or cooker on and place a lid on it to cook

Step 4: Cut Your Vegetables(Optional Step)

You will need:

  • Half a Cucumber
  • Half a red pepper that is also known as capsicum
  • One Carrot
  • A chopping board
  • And a sharp knife (it can be the one that you used to cut up the chicken if you washed it very well)
  1. On your chopping board cut up the cucumber into strips lengthways.
  2. Once the cucumber is all chopped up get your half capsicum and cut it the same way.
  3. Capsicums are quite difficult to cut so before cutting get all of the white insides out.
  4. Finally cut your carrot up a similar way to the cucumber.

Step 5: The Last Stretch, Putting It All Together!

You will need:

  • Your cooked chicken
  • Two forks to shred the chicken
  • Your cooked rice
  • Your extra sauce that was used for the chicken
  • Mayonaise
  • Something to spoon up the rice
  • A bowl
  • Chopsticks or a spoon. Whatever you want/prefer
  1. Your rice is most likely not cooked yet so you may have to keep checking it until it is fully cooked.
  2. Now that your rice is done scoop it up and place two or three handfuls in your bowl.
  3. Shred up the chicken by putting the forks back to back and stabbing them into the chicken.
  4. Pull the forks apart and you should have successfully shredded the chicken piece.
  5. Now do that with all of the chicken. Once you are done put the chicken into the bowl with rice in.
  6. Get your mayonnaise and with the back of a fork try to spread it over your dish.
  7. Your dish is nearly done, All you have to do is pour some of the extra sauce onto your chicken and rice.
  8. Finally, get your chopsticks or spoon and enjoy!
