Introduction: Easy to Make Apple Pickle
This is a very easy method to create a delicious pickle that goes well with most dishes of rice
Finely chopped apples - 1 Apple will do
Chilli powder - 2 tblsp (adjust according to your requirement)
Oil - 6 tblsp (olive oil is best)
Mustard seeds 1 tsp
Fenugreek seeds 1/2 tsp
Asafoetida a generous pinch
Sugar 1 tsp (optional)
Garlic cloves 3-4( optional)
(Note when chopping up the apples, chop into quarters and then create small piles and keep slicing. Take a look at the the picture, it shows the right size of Apple pieces you will need to have)
Step 1. Heat the oil in a frying pan.When it becomes hot, add the mustard seeds and fenugreek seeds.
(The oil will become agitated and that is the best moment to add the seeds into it to release the flavour and essences)
You want the heat on medium as it is the optimum temperature , because the oil won't heat up too quickly, instead at an even rate.
Step 2. When it splutters, add the garlic cloves, curry leaves, asafoetida and saute for a minute.
(It's a good idea to chop the garlic up evenly before putting it into the oil, as there is more surface area so a more even fry)
You should keep the temperature constant here - it is quite important you don't end up burning the seeds and garlic.
If you want to, add some vinegar it is a good idea as it develops the flavour and helps cook the pickle much more neatly.
Step 3. Then add the apples and saute for 5 minutes. Switch off the gas allow to cool.
Generally toss it about so it is evenly fried
Whilst this is happening why not throw the odd chilli or so in it? It increases the spice factor!
Step 4. Next add the chilli powder, salt, sugar and mix well.
You can mix in any other spices you want as well.
Step 5. Leave to cool for a few minutes
You should do this on a trivet as it may affect your worktop otherwise due to its heat.
Step 6. This should be consumed within two to three days.
Or it may become spoilt .
Enjoy the pickle with some rice, and you will realise you can make a pretty good pickle out of an apple!
Most people won't even realise that it even contains an apple.
