Step 1: Wipe!

Take your iron and wipe it on a wet rag. If you try to scrape the gunk off with a sharp object you could remove the coating that coats the soldering iron.

Step 2: Repeat!

Repeat when it gets dirty again.

Also, keep a damp sponge in a tin on hand to just clean it on as your using it. If you use one of those with the rough pan cleaner side they work really well.
