Introduction: Easy Eats: Low Carb Huevos Rancheros

Rotel tomatoes were on sell for a buck a can the other day so I bought a ridiculous amount of them.  Combine that with the fact that my wife made little mini taco bowls for dinner one night, and I got to thinking "hey, I bet I could do that with a piece of ham" cause you know, ham is a very big part of my thought process like, all the time.  Anyway, here was the result.

Low Carb Huevos Rancheros

12 eggs
6 slices of cooked deli ham
12 ouces of shredded cheddar cheese
1 can Rotel tomatoes with diced green chilis

First, spray down a muffin tin real well.  Next, slice the deli ham in half, to make 12 slices, and use that to line the bottoms of the muffin tins.  Crack an egg into each tin, and top with a pinch of cheese and about a tablespoon of Rotel.  Bake it at 350° for about 18 minutes.  I checked it once at ten minutes and again at fifteen minutes.  You want the egg whites to be completely set, but the yolk to still be a little soft. 

Just about three carbs apiece, and it doesn't get any easier.  They freeze pretty well too.
