Introduction: Egg Sauce (Nigeria-Inspired)
This egg sauce is inspired by a very popular Nigerian recipe that is made with tomatoes, pepper, onions, and eggs. Some other ingredients used are vegetable oil and other condiments.
Supplies
Ingredients:
- 4 eggs
- 1 medium-sized onion
- 4 medium-sized tomatoes
- 2 sweet pepper
- Salt
- Curry and thyme
- 1 Maggi seasoning cube
- 1 cooking spoon of vegetable oil
Step 1: Wash and Chop Vegetables
Wash the tomatoes, pepper, and onions and chop them on a chopping board. Although the chopping size is quite flexible, I like to go for small cuts. See attached pictures for samples.
Step 2: Place Frying Pan With Oil and Onions on Fire
Place a frying pan on medium heat. Add vegetable oil and onions and fry till the onions become translucent. See attached video for reference.
Step 3: Add Chopped Sweet Pepper
Then add the chopped sweet pepper and fry for about 3 minutes. See attached video for reference.
Step 4: Add Chopped Tomatoes
Then add the chopped tomatoes and fry for about 4 to 5 minutes. See attached video for reference.
Step 5: Add Condiments
Then add the curry, thyme, salt, and maggi seasoning. Mix everything together with the turner; this helps to distribute the condiments. See attached video for reference.
Step 6: Add Whisked Egg
Break the four eggs into a bowl and stir till the egg white and egg yolk are mixed. Then add the egg to the pan's content. See attached video and images for reference.
Step 7: Stir, Stir, Stir
Cook till the entire content of the pan starts to become firm and starts sticking to the pan. At this point, gently used the turner to scramble the content of the pan. See attached video for reference.

This egg sauce can be eaten with bread, yam, potatoes, and more. I prefer to eat with bread and yam as shown in the attached images.
