Introduction: Egg in a Nest for Under $4
My husband and I try to keep our monthly grocery bill around 350. And since on weekends we don't typically wake up for breakfast that gives us 4.60 per meal. Don't worry we actually eat quite well!
So when I first fell in love with this Egg in a Nest, I got really excited but we were spending to much to make them. So after some thinking I realized that I didn't have to spend as much by using the salad bar!
I got this meal down to 3.02
- 6 pack of day old rolls 1.29
- 2 eggs for .52 cents
- Salad Mix from salad bar for about 1.21
- You'll also need cooking spray.
Note: Please read all instructions before getting started.
Step 1: In to the Grocery!
Our local wholefoods has a salad bar that lets us get just what we need!
So for this recipe you will need:
- A thick crusted bread roll. We get day-old at 1.29 for a bag of 6.
- An Egg per egg in a Nest. My Recipe will be yielding 2.
- about a cup of baby spinach
- some cheese about a teaspoon per cup.
- I like roasted red peppers in mine
- and If you; can add some pre-cooked bacon!
Step 2: Prepping Your Bread!
- Cut off the top 1/4 of the bread and keep this piece it will be your lid later!
- Then using a fork you make a circle on the inside and start to fluff out your crumbs. Now for those of you that are staring at the crumbs and claiming that's wasteful, I agree, if you don't eat the crumbs. (I eat the crumbs.)
After you've cleaned the crumbs of your area go for the next step.
Step 3: Pay Attention to This Order!
So usually I like fun slap together recipes, where specifics don't matter. However you need to pay attention to this layering.
- Spinach First, Peppers Second, Cheese third and Egg on top!
- If you added pre-cooked bacon, you want to add the Bacon Second.
Note:The real reason for this ordering is specifically you want the cheese under the egg. It sort of cradles it for a perfect cooking, if you put the bacon directly under the egg then it makes it greasy, and if you don't put the spinach on the bottom it becomes soupy or under-cooked and no one wants food poisoning.
- Alright now that I've ranted, Put Salt and Pepper on top.
Step 4: Bake'em! 350 Degrees.
Cook at 350 F
for 25 Minutes!
Now you may have noticed that this is in a Toaster Oven!
(I don't typically remember to preheat the oven)
You can use a regular oven just remember to preheat it! Just after you are done with this step don't turn off the oven. These get cooked twice.
Note: If your oven doesn't have even heating you might want to rotate the pan halfway through this process. If you are unsure as to if your oven has uneven heating, you'll have to ask yourself, the last time you cooked a frozen pizza, cookies, or muffins, was one side perpetually browner than the other? If you aren't sure just rotate the pan anyway.
Step 5: Keep Baking Them!
- Now pull them out, put some cooking spray or butter on your lid piece of bread and place it on the egg in the nest.
- Put it back in the oven.
This time you keep it at 350 degrees
But you cook it for 20 minutes.
Step 6: Pull From Oven.
So you have to wait a minimum of 5 minutes before eating these. I typically cook them the night before while I'm doing the dishes from dinner. In the morning I pop them in the microwave for a couple of minutes and out the door I go. If you are doing brunch I suggest adding a cup of Puerto Rican Coffee. >Link below for Coffee.
If you aren't sure if it's cooked just grab a thermometer and poke it. You want it to have an internal temp of 160 degrees.
