Introduction: End of the Week Curry

I start every week by visiting my local farmers market, I feel so inspired and buy a ton of veggies...and then Friday rolls around and I haven't used any of them. Hence the End of Week Curry was born. I always keep frozen peas in the fridge for these occasions.

I am listing veggies here but you can use any veggie of choice.

1 yellow onion diced

1 head garlic chopped

3 Tbl spoons of curry powder

3 cardamom pods

1 tsp cumin

4 dried devil chilies

1 bay leaf

Yellow lentils

Carrots

Squash

Potatoes

Frozen Peas

Water

Cooked rice

Heat two Tablespoons of oil in a medium pot. When oil is hot, add onion, curry and spices, saute until onions are translucent. Add one cup lentils,water (enough to cover the ingredients) chopped squash, greens, carrots, potatoes etc. Bring to boil and then drop to a simmer and cook until lentils are soft. Stir ever so often to prevent it from sticking to the bottom.

Turn heat off and add frozen peas. Salt at the end. Serve over rice.
