Ferrero Rochers are a popular holiday treat so what could be better than a cookie with similar features. Chocolate, nutella, wafers, and nuts; sounds like a combination that calls for a cold glass of milk. I had a lot of fun creating these, and they turned out perfect for our holiday gift baskets. I made mine extra big so you can eat  "just one" and not feel guilty (I only wish) but its extremely hard not to eat more than one still. You can make them anysize you want, if you need to make them for little baskets too. I will warn you, these cookies are highly addictive! Happy making, and happy holidays!

What you need:
Box of plain wafer cookies-the size you desire your cookies to be
1/2 cup chocolate chips
1 cup nutella
1 1/3 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter, softened
1/2 cup sugar
1 egg
1 teaspoon vanilla extract
bag of your choice of nuts-I used almonds

Tin Foil
Gold paper
Labels(paper with words printed on them)

Step 1: Preparing Cookie Dough

In a medium bowl combine the flour, baking powder, baking soda, and salt. Set aside.
In another medium bowl combine the butter, 1/2 cup nutella, and sugar. Cream the ingredients together.  Add the egg and vanilla and beat until smooth. Using a rubber spatula, stir in the flour mixture until just combined. Refrigerate dough for at least one hour.

Step 2: Adding It All Together

Mix 1/2 cup Nutella, and 1/2 cup chocolate chips, microwave on low until melted. 

Take your dough out of the fridge, grab a spoonful and flatten it to the size of you waffer cookie. Place it on a greased cookie sheet/tin foil covered sheet. Take your wafer cookie and dip it in chocolate and cover both sides then dip it into your choice of nuts and cover both sides. Place the wafer onto the dough that you have flattened. Take another spoonful of dough and flatten it down to the same size of the first, place it on top and smash sides together until center cookie is covered.

cook at 375 degrees F for 10-15 min or until sides are golden
Let cool

Step 3: Wrapping

To give your cookies the Ferrero Rocher look, you can purchase gold tin foil (I couldn't find any that was a good price). So I took tin foil, taped gold paper on the outside of it, and then wrapped the cookies in them. Then I printed off some labels from the computer and taped them on as well. Your cookies are ready to be given, that is, if you can share them! Good luck!
