Introduction: Fish in Coconut Milk

The Philippines.... beautiful island with a lot of wonderful fish.

Go snorkeling there or even better, go diving, you will see a hidden colorful world under water, water that is clear blue.

And because of the many fishes there are also hundreds of fish recipes. This is one of them, very easy, very quick and very good! It has a taste of summer, sun and of course... the Philippines.

Step 1:

For 4 persons:

800 g Red Snapper Fillets

2 tbsp Olive Oil

3 cloves of Garlic, chopped

1 Onion, chopped

5 tbsp Cider Vinegar

2 tbsp Soy Sauce

1 can Coconut Milk (400 ml)

Salt and Pepper

1 red Chili if you like

Step 2:

Wash the fish fillets, cut them into smaller pieces and pat them dry with a kitchen towel. Heat the olive oil in a deep pan and fry the garlic and onion.

Than add the vinegar, soy sauce and coconut milk. Bring to a boil. Now add the fish pieces, season to taste and add the chili if you like. Let simmer for 10 minutes.

Step 3:

Serve with white rice.
