Introduction: Foil Packet Brown Sugar and Cinnamon Sweet Potatoes

About: Jack-of-all trades, master of some. I would probably be much more modest if it wasn't for these delusions of granduer that I suffer from.

This is my second favorite way to consume sweet potatoes, second only to the delicious sweet potato pie. This simple recipe works equally well cooked on the grill, or over a campfire.

Step 1: Tools and Ingredients




Heavy Duty Foil (don't buy cheap foil ... it will only end in sadness)


3 Sweet Potatoes ( I usually get 2 servings per potato so it is easy to figure out how many potatoes you will need depending on how many hungry mouths you have)

1/2 cup Brown Sugar

tablespoon Cinnamon

1/2 cup Butter

Step 2: Putting It Together

Peel and dice the potatoes.

If I am making these at home for the grill I will melt the butter and combine it with the brown sugar and cinnamon then toss the potatoes in the mix before portioning it out into the foil.

Don't forget to scrape all that yummy sauce out of the mixing bowl and onto the potatoes before you close up the packet.

When I am camping I will combine the brown sugar and cinnamon and sprinkle that liberally over the potatoes .. toss in a few pats of butter and close up the foil packet.

Pro tip - If you are cooking right on the coals instead of on a grate or grill add a second layer of foil to prevent accidental foil punctures and to help prevent scorching from uneven heat distribution.

No matter which way you do it they come out delicious.

Once you have the servings portioned out onto the foil, it is time to fold up the packets. Take the top and bottom of the foil square and put them together. Fold the edge over several times to provide a good seal. You should now have what looks like an aluminum foil enchilada. Now you want to fold over the left and right sides to close up the packet so you can start cooking.

The important thing to remember is that when you are folding up the packets is that these will need to get flipped while cooking so you want at least two folds, I prefer at least three to make sure all that tasty sauce doesn't leak out.

Step 3: Fire Up the Grill and ... Fail

Packets are all made up.

Fire up the grill.

Notice that there is a distinct smell of burning rubber that shouldn't be there.

Marvel at the improvised flamethrower that is made when the feed line for your grill melts.

Quickly shut off the tank and mutter words that can not be repeated in polite company.

Switch to plan B (B stands for Backup)

Step 4: Always Have a Backup Plan

Preheat the oven to 400 F

Place your foil packets in the oven.

Bake for 15-20 minutes, flip the packets and give it another 15-20 minutes.

Rejoice .. The meal is saved!
