This Fondue in rustic bread is a fun, easy, and enjoyable recipe to warm those cold days. This can be made with a big loaf of bread if you enjoy sharing the dish, or with small individual portions.

All the crust of the bread including the lid can be pinched or cut into pieces to dip in the cheese all the way down.

STEP 1: Prepare the Ingredients

Firstly, we will grate the cheese to our desired size. The finer it's done, the creamier but with less texture at the end. I chose medium for the curated sheep and fine for the Emmental to reduce the gummy effect and make it easy to take a bite.

Secondly, we need to chop the spring onion (that's already been cleaned) and put it in the blender with water covering it, to reduce the sourness and the compounds that make every chef cry. Once done, put it on a strainer and let it sit while doing the other steps.

STEP 2: Mayonaisse

The very simple homemade mayonnaise.

We start with all the ingredients together in a glass, remember to take the middle part of the clove out to reduce the non-pleasant long-lasting taste of the garlic.

Season it well with salt and pepper to your taste, and start blending from the bottom making it to the top slowly until you get a smooth texture like in the photo.

STEP 3: Prepare the Bread

We will cut the top of the bread, to make a lid. This will make access to empty the soft part leaving 1-2cm on the wall to ensure the moisture doesn't get through to the exterior crust.

STEP 4: Finishing the Recipe

First, while preheating the oven at 180ÂșC, we gather all the ingredients prepared previously in a bowl (grated cheese, spring onion, and mayonnaise), then, we add salt and pepper and mix it well until getting a homogenous texture.

Second, we fill the emptied bread and place the lid on top.

We finish by wrapping the bread with aluminum foil making sure there's no visible part of the bread (We make two cuts of aluminum foil laid in a cross pattern).

To the oven for 1h and enjoy!
