Intro: Fried Ramen & Eggs

This recipe is a quick, easy, and cheap meal solution! Works great for any meal of the day, breakfast, lunch, or dinner!

STEP 1: Step 1: Ingredients

What you need:

1 package of Ramen [any falvor you want, but I prefer the roast beef, or beef]

3 eggs [if you are cooking for multiple people, for each person add 1 package of Ramen and 3 eggs for each person seems to work well. Although 2 eggs per person would still result for a nice meal]

Some cooking oil for frying the ramen

2 or 3 cups of water

1   pot for boiling water
1  skillet
1 bowl
1 plate
1 fork
1 Strainer
1 Whisk for the eggs

STEP 2: Step 2 - Let's Get Cooking!

First thing you want to do is start heating up some water, put about 2 or 3 cups of water into a pot. While the water is coming to a boil, go ahead and get your eggs beaten into a bowl like how you would prepare scrambled eggs. When you are done, set the bowl of beaten eggs to the side.

When the water starts boiling, drop in your noodles. DON'T put the seasoning packet that comes with the Ramen into the water, save it for later. Cook the noodles until they are generally pretty soft. Next step is to drain the noodles into a strainer...Try to get as much of the liquid out as you can.
Now with the noodles drained, to make it easier, place all the noodles into a large enough bowl to hold the Ramen Noodles. Open the seasoning packet and pour it all into the bowl, after it's empty mix the seasoning into the noodles. Once thoroughly mixed, it's time to move on to the next step.

STEP 3: Step 3 - Last Step

Put your skillet onto the stove and warm it, once the pan is heated add a little bit of cooking oil and spread it across the surface of the pan. Once done, add the Ramen Noodles from the bowl into the skillet, and cook until they are a little crispy. Make sure to move the noodles around often so they don't burn.

Once the noodles are crispy, take the bowl with the beaten eggs and slowly add them to the ramen noodles, stirring frequently to avoid sticking and burning. Once the eggs start to firm up you can break the eggs into as small or as big of pieces as you want. Once the eggs have thoroughly cooked, you might want to cook them longer then you usually would cook scrambled eggs, if there's just a slight crunch on the eggs it adds a lot to the dish.

Remove from heat, and serve onto a plate. Serve with buttered bread and\or biscuits or tortillas.   Also adding cheese, meats, or vegetables would be awesome.   Hope you enjoy this recipe as much as I have and continue to do.

I have been making this since the 80's when my children were little. My Mother-In-Law would use leftover egg noodles to make eggs and noodles for breakfast the next day or for lunch or a snack for her boys. She told me it was a German recipe, I was not sure if she was tilling me the truth till I met a man who made the same recipe only he used Macaroni and said that it was a German recipe. We ate a lot of Ramen type noodles so I decided to see how using them to make eggs & noodles. Everyone loved it! I found if I boiled the noodles 2 minutes instead of 3 minutes the noodles cooked up and crisped up better. I do not add the seasoning packet to the noodles after they are cooked, I add it to the scrambled eggs, (but not the whole packet, that's to salty) and scramble away or I season the eggs with just salt & pepper or whatever seasoning I prefer. I cook the eggs & noodles something like a frittata and sometimes I add onions, mushrooms, etc... It has been such a big hit in my family all my children make it to this day, and making it their way!

If you boil the Ramen in a non-stick pan, pour off the water leaving the noodles in the pan, add the oil and fry the noodles, then add the eggs, you'll save on clean-up.

My mother used to make something like this when I was a kid. I've been eating instant noodles all my life - I now review them online on my blog. I've got a lot of things I do involving ramen and eggs there.
