Introduction: Chocolate Açaí Bites

Our family has a special night of the week called, Thursday Night Treats. The Thursday of every week we have a special treat together. Sometimes we go out for dessert but lately we have been experimenting with new homemade desserts. I recently found some fun silicone molds that we have been trying different concoctions with. This past week we made Frozen Chocolate Açaí Bites and Popsicles. These are so simple to make and were delicious!

Supplies

Silicone mold of choice

1 cup Açaí Sorbet (we used Açaí roots brand)

1/2 cup Coconut oil

1/2 cup unsweetened cocoa powder

4 Tbsp. Honey

1/2 teaspoon Vanilla

2 cup glass measuring cup

Step 1: Place Silicone Molds on a Cookie Sheet

The silicone molds are very flimsy. To start, place the molds on a cookie sheet. I did not place the molds on the sheet initially and it made my project a little messy. I used three different molds: small popsicles, American flags, and stars/hearts. You can use any type of mold but I found the, Create It, brand at Micheals is excellent.

Step 2: Prepare Açaí

Melt 1 cup of the Açaí sorbet in the microwave to smoothie consistency. I used 10-15 seconds. Fill each mold with the melted Açaí no more than 3/4 of the way full. Place in freezer for 1-2 hours. Depending on the size of your mold and how long you melted the Açaí, the freeze time will vary.

Step 3: Remove Frozen Açaí From Molds

Remove frozen Açaí from the molds and place on a tray and back in the freezer. The Açaí needs to be completely frozen before placing it in the chocolate coating. Wash and dry the silicone molds before proceeding to the next step.

Step 4: Make the Chocolate Coating

The next couple of steps need to be done as quickly as possibly in order to keep the frozen Açaí from melting. Have the frozen Açaí easily accessible. In a 2 cup microwaveable dish mix up the chocolate ingredients. First take 1/2 cup coconut oil and 4 tablespoons honey and microwave for 10 seconds. Quickly stir to combine. Add 1/2 cup of unsweetened cocoa powder and stir to combine. Add 1tsp vanilla. Quickly pour the chocolate into the molds about 1/4 the way full. Quickly grab the Açaí from the freezer and place the frozen pieces back in the silicone mold. Placing the frozen acai into the chocolate filled mold coats the top and sides of the acai bites with chocolate. Next pour chocolate carefully over the exposed surface. This last step is messy but helps to completely coat the Açaí in chocolate. Quickly place back in the freezer.

Step 5: Enjoy

After 1 hour (it doesn't take very long) remove açaí bites from the mold slowly and carefully. Eat immediately or put back in the freezer for another time. They are super easy to make and taste delicious.
