Intro: Gluten Free Lemon Brownie (Blondie) Slice

Ingredients
  • 250g butter
  • 2 cups of caster sugar
  • 4 eggs
  • 1 1/2 cups gluten-free plain flour
  • 1tspn. Xanthan gum
  • 1 cup of coconut
  • 3 tsp lemon rind
  • 1/4 cup lemon juice
  • Pure icing sugar for dusting.

STEP 1: Melt Butter and Allow to Cool Slightly

Preheat oven to 170c fan forced and line a slice tin with baking paper.

STEP 2: Stir in Caster Sugar Until Well Combined

STEP 3: Add Eggs One at a Time

STEP 4: Fold in Sifted Flour, Xanthan Gum, Coconut

STEP 5: Grate Lemon Rind and Add the Juice

STEP 6: When Well Combined Pour Into the Prepared Tin and Smooth Top.

STEP 7: Bake for Approx. 30 Min at 170c/338f

STEP 8: Once Skewer Comes Out Clean, Allow to Cool in the Tin

STEP 9: Cut Into Bars and Dust With Icing Sugar Just Before Serving.

STEP 10: Enjoy With a Cup of Tea
