Gluten Free Mac & Cheese

Intro: Gluten Free Mac & Cheese

Ingredients:

8 oz (dry) GF pasta (I like to use tiny shells)
3 TB butter
2/3 cup heavy cream
1/4 cup whole milk
2 cups shredded cheddar cheese
1/2 cup grated parmesan cheese
1/2 tsp salt
1/2 tsp seasoned salt
fresh ground pepper (about 5 twists)

Instructions:

1.   Cook your pasta according to the package.   While it is cooking, take out all of your other ingredients and get them ready on the counter. 
2.  When the pasta is done cooking (do a quick taste test to be sure), drain it into a colander  and let it sit there while you make the sauce.
3.  Using the same pan you used to boil the pasta, melt the butter over medium heat.  Add in the heavy cream, milk, and the two cheeses.  Stir until the cheese is completely melted.  Next add the salt, seasoned salt, and pepper.
4.  Add in the cooked pasta and stir until well combined.  Taste a bite to be sure its well seasoned....add more seasonings if you like.

Notes:  I could eat this every single day and be completely happy.  The best gluten free pasta I've found is made with a mixture of corn and quinoa flour (see photo above).  It tastes the most like traditional pasta.  Sometimes I add in a bag of frozen peas and carrots, some broccoli, or chicken....other times I serve this to my 3 year old as is.  Its very much a comfort food :)

This is the best made from scratch macaroni and cheese recipe I have ever tried. Thank you!! I am passing on the 'heavy cream' ingredient to my mom so she will know that is the trick to creamy sauce.

tinkyada pasta is probably the best elbow pasta i've tried so far it actually tastes and feels likes real pasta. you can even make a pasta salad with it. they also make lasagna noodles.we also liked ronzoni and mueller's gluten free for spaghetti.
as a kid, it has been hard to find good gluten free Mac n cheese, but this does the trick!!
I just made this recipe about 10 minutes ago for a dinner my Bible Study is hosting tonight and it tastes SO GOOD!! I made a couple modifications to make it a little less of a calorie & fat bomb, which actually made it more gooey than it looks in the photos. (1) Instead of 2/3 C heavy cream = 2/3 C 1% milk + 1.5 Tbs corn starch (2) Instead of full-fat cheeses = reduced fat cheddar + reduced fat Parmesan. Thank you for this recipe!
I am so so happy you enjoyed it!! I also change up the recipe sometimes, depending on whatever I happen to have handy in the fridge at the moment. I like to make things full of fat for my 3 year old...but most everything I make can be made "lighter." Great job!
I've actually searched high and low for a good gluten free pasta, as I'm a former pasta nut with a newly found minor gluten issue. I've tried the pasta you have and am happy with the taste, but not the texture. I'm a crazy person when it comes to the texture of my food. My favorite brand is the Archer Farms stuff you can get at Target. The texture is almost exactly like real pasta and my boyfriend (who is not gluten free) can barely tell the difference. All that being said, I love Mac and Cheese and will definitely be trying this recipe soon!
