Intro: Gluten Free Peanut Butter Oatmeal Chocolate Chip Cookies

These cookies are delicious and store very well on the counter or in the freezer!

Ingredients:

1 cup peanut butter
1 egg
1/2 cup melted butter (1 stick)
1/2 cup sugar
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp vanilla
1/2 cup coconut flour
1/2 cup whole milk
1/3 cup mini chocolate chips
1.5 cups certified gluten free rolled oats

Instructions:

Mix everything together and bake on a parchment paper lined baking sheet at 350 degrees until just golden,  about 15-17 minutes.

One question: how many cookies would you say this batch of ingredients make?
It depends on how big a cookie you prefer. I make my cookies large, using a scoopful of dough (about 2TB) which gives you about 18 three inch cookies. If you used a smaller scoop, you would get many more cookies :)

Have you tested different nut butters (almond, macadamia, cashew) in place of peanut butter? Do you need to modify the recipe at all?
I haven't yet! But if someone is looking to make these for a school lunchbox, and they have a "no peanut/tree nut" rule at school, I would try Sunflower Seed Butter. The taste will be slightly different, but the texture should remain the same.
