Introduction: Gobi Manchurian

Gobi Manchurian is an Indian dish, popular among street foods, served from street food stall to large Hotels. Gobi means Cauliflower in Hindi, and Manchurian meaning veggie balls explains the Chinese style of cooking.

Unfortunately, due to COVID 19 pandemic, restaurants, hotels, etc are closed. A cauliflower had been lying in a fridge for a week.

So I finally got rid of my laziness to cook something, it happened to be tasty gobi manchurian.

Supplies

The whole prepping can be divided into two parts.

In the first part, cauliflower nuggets are dipped in batter and fried. The second part consists of sauteing, adding spices 'n sauces, etc.

Ingredients (serves 2)

For Batter

-Cauliflower..........(Approx 250 grams)

-Ginger-Garlic Paste.........(1tsp for batter)

-Refined Flour.......(1/2 cup)

-Corn Flour.........(1/2 cup)

-Water............(as per batter consistency)

-Salt........(as per taste)

-Chilli powder.........(1/2 tsp)

-Pinch of turmeric powder

-Ginger-Garlic paste.........(1/2 tsp)

-red/orange food color(Optional)

-Cooking Oil for deep frying

For saute

-Cooking Oil........(5 tsp)

-Onions...............(About 4 medium-sized ones, or 2 large ones)(sliced)

-Spring Onion........(1/4 cup)(optional)

-Tomato..........(1 cup chopped)

-Sweet Corn.......(1/4 cup)(optional)

-Bell Pepper(Capsicum)........(1/2 cup)(optional)

-Garlic........(4-6 cloves)(finely chopped)

-Ginger........(about 1/2 inch)(finely chopped)

-Green Chilli.....(4nos)

-Black salt........(a pinch of it)

-Soy Sauce.......(1 tbsp)

-Chilli Sauce......(1 tsp)

-Chilli Powder.....(1/2 tsp)

-Coriander powder......(1/2 tsp)

-Chat Masala......(1/2 tsp)(optional)

-Garam Masala.....(1/2 tsp)

-Ketchup/Tomato sauce.........(4 tbsp))

For Garnish:

-Coriander.......(chopped)

-Mint leaves(pudina)......(chopped)

-Lemon juice...(1 tsp)

-Ketchup.......(for dip)

Step 1: Preparing Nuggets

  • Separate the cauliflower into small florets.
  • Add them to hot water along with a pinch of salt and cover for 5 mins.
  • Mix the ingredients for batter.
  • Remove cauliflower florets from water and add to batter. Mix well.
  • Deep fry the batter-dipped Cauliflower florets until golden brown and keep aside.

Step 2: Part 2. Final Preparation

  • Heat oil in a large Kadai/ Frying pan.
  • Add chopped ginger, garlic and saute for a min
  • Add the onions and saute till they become transparent.
  • Add Tomatoes, Cooked Sweet corn, Bell pepper(capsicum), and Spring Onion with black salt.
  • Saute for a couple of minutes, add Ginger-Garlic paste, soy sauce, and continue sauteing.
  • Add Tomato Ketchup/tomato sauce, chili sauce, salt as per taste and keep mixing until it starts to boil.
  • Add Chilli powder, Coriander powder, Chat Masala, Garam Masala and mix them.
  • Add the fried Cauliflower nuggets and mix for about 2 to 5 minutes at high flame.
  • remove from heat.

Step 3: Serving and Eating, Yay!

Serve Hot, Garnish with coriander, mint leaves and lemon juice. Dip in ketchup and enjoy!!!!!!!!!!!
