Introduction: Gourmet Coffee Break

A gourmet coffe break is an original way to finish a lunch or a dinner, and can be enjoyed as a dessert. This one is made of three sweetmeats : Strawberries and pineapple glass cup, Chocolate surprise, and little Financiers.

Step 1: Strawberries and Pineapple Glass Cup

For 6 persons :

- 250g of strawberries
- 1/2 pineapple
- 2 soup spoons of acacia honey
- pepper
- some basil leaves

1) Wash and hull the strawberries. Cut them into four pieces and put them in a mixing bowl.

2) Peel and cut the pineapple into little pieces, and add them to the strawberries.

3) Add the acacia honey, and 2 or 3 turns of the pepper mill.

4) Mix delicately.

5) Distribute the mixture in glass cups and decorate them with basil leaves.

Step 2: Chocolate Surprises

For 6 persons : 

-15 + 6 pieces of black chocolate
- 4 eggs
- 120g of sugar
- 75g of butter
- 1,5 soup spoon of flour

1) Preheat the oven at 180 degrees C°.

2) Make chocolate melt with bain-marie and add the butter.

3) In a mixing bowl, mix eggs, sugar and flour.

4) Add the chocolate and mix.

5) Pour a half of the mixture in ramekins, which should have been buttered and floured before, and then settle, in the middle of the paste, a piece of chocolate.

6) Then, cover with the rest of the mixture.

7) Put ramekins in the over for 10 minutes.

These Chocolate surprises are better when they are warm.

Step 3: Little Financiers

For 6 persons :

- 3 eggs whites
- 35g of flour
- 40g of powder almonds or hazelnuts
- 110g of sugar
- 45g of butter

1) Preheat the oven at 180 degrees C°.

2) Make the butter melt slowly.

3) At the same time, mix flour and powder almonds or hazelnuts.

4) Add sugar and melted butter, and then, mix.

5) Beat eggs whites until stiff ; they have to be very firm.

6) Add them to the mixture, and mix until get a homogeneous paste.

7) Distribute the mixture in little bowls.

8) bake them for 45 minutes.

Step 4:

Arrange and distribute glass cups, Chocolate surprises and Little Financiers thinly sliced on little trays. Serve them with, of course, a warm coffee.
