Introduction: Grandma Barb's Cookie/Cake Pie
I work with a lot of older folks in my day job and Grandma Barb and I got to talking about simple desserts and baking. As I told her, and as you all know, I am a dangerously inept baker, so simple desserts are a-okay with me! This is a recipe she recommended I make for our local hackerspace gathering!
Needed:
- 1 bag Betty Crocker sugar cookie mix
- 3/4 stick of butter
- Pie filling of your choice (I chose apple)
- 2 eggs
- 9x9 round baking pan
Step 1: Preheat the Oven

Step 2: Get Your Ingredients Together in One Bowl
Using a bowl large enough for all of the ingredients, put in your sugar cookie mix, 2 eggs, and 1 stick of softened butter. For the butter, I often microwave it for 10-15 seconds. The interior of the stick of butter will melt, but not the outside.
Step 3: Mix, Mix, Mix!
Using just a fork or spoon, I mixed this up! No need for a mixer or anything fancy like that.
Step 4: Make the Bottom Half
Put about 2/3rds of the mix into the pan and spread it evenly on the bottom. You can use your fingers to press this down or in my case, a fork works very well as well.
Step 5: Add Fruit!
Put the pie fruit filling on top of this! I chose apples, but I've been told that any pie filling will work.
Step 6: Dollop the Remaining Batter
Once you've got your fruit set, you'll want to put small clumps of the rest of the sugar cookie batter onto the top. I just used my fork for this, clearly not worrying about whether the clumps were round or equal in size :).
Step 7: Bake at 350 for 50 Minutes and Enjoy!
50 minutes sounds like a long time, and at first I worried that it'd be too much time! But when it came out, it was perfect!
The little clumps on top became a crust, and the apples kept the batter underneath it moist. It was almost like an apple pie...cake....
Serve with ice cream and enjoy!
