Introduction: Greek Lemon Chicken & Potato Bake
This is a Greek style Chicken bake recipe. Most of the recipes would call for just lemon juice, but the addition of orange juice makes the difference. This is one of my family’s favourite recipes and I’m sure you’ll love it too. I love this recipe because first of all it’s a simple dish to do for the whole family and secondly, you can prepare it beforehand and pop in the oven just an hour before your lunch/dinner. This recipe works great for big parties as well.
Ingredients:
Chicken (skin on) 1 & 1/2 Kg
Potatoes 600g
Salt - 2 tea spoon
Black Pepper Powder - 1 tea spoon
Oregano - 1 tea spoon
Thyme - 1 tea spoon
Paprika Powder - 1/4 tea spoon
Crushed Garlic - 3
Lemon/Lime Juice - 1 Table Spoon (1 Lime)
Fresh Orange Juice - 1/4 Litre (250ml)
Olive Oil - 2Table Spoon
Step 1: Step 1: Mix Ingredients
In a jug put Salt, Black Pepper Powder, Oregano, Thyme, Paprika Powder, Crushed, Lemon/Lime Juice, Fresh Orange Juice - 1/4 Litre (250ml) & Olive Oil. Give a good mix.
Step 2: Step 2: Coating
Pour the mixture on Chicken pieces & Potatoes and coat well.
Transfer Chicken & Potatoes on baking tray (lined with foil). Pour the juice as well.
Step 3: Step 3: Baking
Bake at 425F / 220C pre-heated oven for 45-60 minutes.
Make sure you turn them at halfway.
