Introduction: Green Bean With Chickpeas, Red Onion and Cumin-spiced Yogurt

Step 1: What You Will Need:
- 1 red onion
- 2 tbsp red wine vinegar
- 1/2 tsp caster sugar
- 450g fine green beans
- 400g tin chickpeas,drained and rinsed
for the spiced yogurt
- 2 tsp ground cumin (you can add more if you would like)
- 2 tbsp olive oil
- 1 garlic clove
- 1 lemon
- 200g of natural yogurt
Step 2:
Chop the onion and add it to the bowl.
Step 3:
Add the vinegar,sugar and a pinch of salt; mix well. Cover and set aside for later.
Step 4:
Cook the beans in a pan of boiling water for 4-5 minutes. Drain, refresh in a bowl of iced water. Set aside to chill until needed.
Step 5:
Chop the garlic up finely.
Step 6:
heat the oil in a pan.
Step 7:
Add the garlic and cumin. Mix until fragrant.
Step 8:
Add the mixture to a small bowl.
Step 9:
Juice the lemon and tip into the small bowl.
Step 10:
Stir in the yogurt and season to taste.
Step 11:
Put the chickpeas in a dish and toss with half the yogurt mixture. Add the onions, along with the beans.
Step 12:
To serve toss with the rest of the yogurt mixture and place in a nice dish.
